I've worked out the issue. Nothing to do with Sata drives.
Simply my older motherboard although Uefi and Legacy will only boot MBR with MacOs.
It will boot GPT with Windows.
I've always created mac installs with MBR on this PC and thought this Catalina install with APFS had somehow...
Sorry to hijack this thread. How do you temporarily change the partition scheme from MBR to GPT and back? I too have older machine and have El Capitan installed on MBR. I've love to try this.
@RhubarbMac, there is a bug Multibeast for El Capitan.
You need to change the System date to the same date as Multibeast and then it will build.
I know from memory that Multibeast 8.2.5 I had to use the date 02/06/2016 and it worked. Then change the date back :)
Update:
I've managed to get El Capitan installed on a MBR formatted disk by:
Creating a Unibeast El Capitan installer in MBR format
Installing El Capitan in GUID via the installer and completing the installation but always booting via the USB installer
Then I booted into my working Mountain Lion...
