Updating to GM via App Store worked really well for me. Only problem I had was Clover not picking up the Install Partition (actually i think that is normal) and the need to use the beta boot arg for AppleALC and NvidiaGraphicsFixup
I think a GTX 980 / Ti would be a decent upgrade to your system.
Your CPU IS overclockable. And i don't think that you will notice the difference between 2133MHz and 1600MHz (RAM can also be overclocked)
That depends on what your wand to do with your machine.
For gaming a i7 is NOT necessary but if you want to do video editing or something similar then the extra Threads of an i7 are really helpful.
Is your IGPU disabled in Bios and are your sure that the Nvidia Drivers are installed and activated?
Also make sure to boot with nvda_drv=1 maybe inject Nvidia in the GPU section of Clover might help.
Do the fans spinn at max while your pc is booting? If so then you can disable that via a GPU Bios mod. But i don't know if there is a modding utility for the 10XX series...

Try to boot with -v and show us a picture of the Messages you got.
X99 platform is not completely supported in MacOS so it might be difficult to setup.
