Now I cannot boot into the desktop, cant get past the Boot Manager now :(
I think I changed system parameters in config.plist to not detect kexts?
How can I repair it if I cannot boot to the Desktop?

OK so I showed off my new Hackintosh during a Zoom meeting with my local Pi Jam and video worked fine but not audio input or output (thought I had checked this but obviously not).

When I open Clover Configurator there are 4 partitions listed:
Partition Scheme
EFI disk0s1 Mount Point = /Volumes/EFI
Untitled disk0s2 Mount Point = N/A
Recovery HD disk0s3 Mount Point = N/A
EFI Partitions
EFI on Recovery disk0s1
The only one with a Mount Partition option is the last one...
Copy the folder with the contents in onto the mounted EFI partition or copy just the file contents of the folder and place them directly onto the EFI partition?

OK so following your advice I used a USB Hub and got past the error, all seemed to be going well and booted into Clover and I ran the OS X Installer in Verbose Mode. I ended up at the OS X installation screen where I was able to access Disk Utilities and Erased the HDD.
