Last Hackintosh parts questions

Hello folks,
I’m planning on building my (last) hackintosh.

It will be Sonoma / Win 11 dual-boot, mainly for software development and possibly some gaming. DCS, Xplane, possible but not likely VR.

I’d like to use it for 5+ years without hardewware upgrades.
Once I can’t use Xcode, it’ll just be a normal windows PC.

After a couple of weeks of research here in the forms, here’s the spec I’ve got so far:
CPU: i9-14900k
CPU Cooler: Nuctua NH-D15 with Thermalright frame.
Motherboard: Gigabyte z790 AOURS Elite AX (Open to suggestions)
HDD: WD SN850x 2tb (two of those) and a 4tb for Time Machine
GPU: AMD RX 6900/6800/6700 if I can find one for a semi reasonable price…
Memory: 64gb TBD (open to suggestions)
PSU : 800w or more 80+ gold TBD
Case - TBD
Wifi- Ethernet cable…

Some questions about graphics:

I assume I can forget about Rx 7000 series.
Is Sapphire still the only way to go? Do I still avoid XFX per Dortania?
There’s not a lot out of stuff out there…
I’d like to run 3 monitors, would that be an issue?
Any thoughts or suggestions would be appreciated.

Correct, they won't work.

You can use Gigabyte or XFX with no problems if you don't want Sapphire.

No Problem.

Your hardware choices so far should work if you build the OC EFI folder correctly. We're all hoping that Apple doesn't end Intel support this year. We'll know by this June at WWDC. Over 4 months away. I think it will continue in macOS ......? 15. Not sure about macOS 16 though.
