How to make my Sonoma Installation USB ?

I have the USB Stick ready, did it following this guide, what's comes next? By installing Sonoma Clover will be installed as well?

I installed Clover, as the guide states, in the USB stick containing Sonoma, then I added all the needed kext to the EFI folder. Should I replace that EFI folder with the one you are poiting out in the link? By the way, my GPR is not Vega 56 but rather a Saphire Radeon Nitro+ RX580 8GB, would that EFI folder still work for me? Thank you

It should work, the GPU doesn't make a difference here. Add your SMBIOS and Serials to the EFI before trying to boot.
 
How do I add my SMBIOS and Serials to the EFI?
Use PlistEdit Pro app. Has a free trial. Open up the config.plist with PLE Pro app and go to area shown in red box.
The SystemUUID section must also be filled in or it won't boot. You can use OCAT to generate it if need be.

So far I have the bootable USB Stick done following the guide, so Clover is installed in the USB stick too. I have the EFI folder from the link (EFI-sonoma-share.zip) from wich I already have the plist updated with SMBIOS and Serials. I guess EFI folder installed by Clover in the USB Stcik need to be exchanged with this new one. What should I do next?

I think you misunderstood. Stop using the Clover EFI folder, you don't need it. Update the SMBIOS and serials etc. in the OpenCore EFI folder's config.plist from Edhawk. You are moving on from Clover, it's not going to be your bootloader going forward.
