Of course you can't boot with SIP enabled since you use OCLP to patch your system.

And your GTX 1060 may present you with a display but it certainly does not provide graphics acceleration. Applications that require graphics acceleration will not work properly.

You should remove the 1060 and use a supported AMD graphics card like the RX 580. Then you may also be able to install Sonoma without using OCLP by using a supported SMBIOS like iMacPro1,1.
