2) What brands or models of RAM and SSD compatible with Mac you recommend?

3) I found a Fenvi Brand M2 WiFi/BT compatible with Mac... Any opinions on it?

You may want to wait and see what Wifi/Bluetooth module it ships with, it will include one even if you go bare bones and if its an AX210 or similar you'll save money. Up to you but that's all I did being I am not a fan of OCLP and the security features you have to disable to run it. As always up to you.
Also RAM is pretty much RAM, if it works in the machine then it will work in OSX or Windows. WD Black SSDs, as @craighazan says, are very solid.
I also agree with @Feartech regarding multi booting, on my laptop Windows and OSX share a drive because it only accommodates one SSD but on anything else I'd always use two separate drives. Easier to maintain, windows update likes to overwrite the boot partition and all you can see starting the machine is windows.

I just bought the NuC 5900HX for around $260 and a kit SO-DIMM DDR4 3200 2x8GB Crucial brand for around $55.

I'm looking at M.2 2242 and I can only find the KingSpec brand... But for M.2 2280 I can find Crucial, Kingston, Samsung, WD, etc.

I will wait to receive everything to see what M.2 WiFi/BT module it comes with and see if it is compatible with Mac OS.

Good point Lee. It's mainly macOS versions Monterey or newer. The OS X naming ended after El Capitan was released. Sierra was the first to be called macOS.

I always thought of macOS as OSX with "X" being a variable that could apply to different versions. Not accurate I guess except in the leesure universe.:lol:

About RAM and SSD for the NuC GenMachine 5900HX, could you help me once again?

In terms of compatibility and performance, what do you recommend me?

1) SO-DIMM DDR4 3200MHz 2x8GB around $50:
· Crucial (higher latency, CL22)
· Kingston (CL20)
· Kingspec (lower latency, CL19)

2) M.2 PCIe 3.0 x 4 2280 250GB around 45$:
· Crucial (3400/1400Mbps)
· Kingston (lower speed, 2100/1000Mbps)
· Kingspec (highest speed, 3400/3000Mbps)

3) M.2 PCIe 3.0 x 4 2242 250GB I have only found Kingspec.

On paper, the Kingspec brand offers the best results and prices... but it is still a Chinese brand and I doubt these results and its compatibility.

First one, make sure the speed of the ram is 3200, otherwise it won’t boot.
 
Of course, both the NuC GenMachine 6900HX and the RAM I put in from Crucial, Kingspec and Kingston share the same specifications: SO-DIMM DDR4 3200MHz.
