Well they've covered a costal location with Mavericks and then a lush location with Yosemite. If they are trying to hit the California climates my guess is they would hit a desert: Mojave, or maybe a ski/winter destination: Mammoth or Tahoe.

The only place in CA named Fuji is a Sushi Bar in Sacramento. So that's not likely.
10.12 is codenamed Fuji but that will not be the name of the public release. Must
be a place (scenic) in California that Apple will choose.
