Would you recommend the CustoMac Mini with an i7?

You shouldn't have any problem using the HD3000.
 
I've been running a CustoMac Mini with a Core i7 2600k for about 3 months now.

GeekBench Score: 12775

Running dual 23" monitors off the on-board DVI and HDMI ports

Love it!
