Seems like very thorough description.

It would be great to have a bit more detail on 4. "copying an EFI" seems potentially fraught with the same issues you would have cloning any volume. How should we do this?

-Does creating a new APFS formated partition or volume automatically create an EFI partition?
-How do we "copy the EFI" to this new partition?
-Will CCC do this for us?
an EFI partition gets created when you erase a drive as hfs/apfs

you copy the EFI folder to the EFI partition the same way you would copy any folder
 
Using Clover Configurator successfully clones the EFI from one drive to another but the problem I discovered is that what you get is identically named EFI drives on the startup and its confusing. It should be intelligent enough to recognize the target drive's unique name?

never used clover configurator to clone an EFI before, also don't use it as a rule anyway

basic copy and paste a folder into another folder via Finder normally works
